The Pineapple Upside-Down Cake Ice Cream didn’t turn out quite how I wanted, but it was still good and it was still eaten. The ice cream part I think came out really good, but if I made it again, I wouldn’t mix in the cake.

This is the recipe I used for the ice cream which was pretty much a combination of several recipes.

Piña Colada Ice Cream

Ingredients

* 4 egg yolks
* 1 1/2 cup half and half
* 1 can cream of coconut
* 1 tbs brown sugar
* 1 cups whipping cream
* 1 (8 ounce) can crushed pineapple, undrained
* 1/4 cup pinapple juice
* 1/4 cup cherries in syrup, crushed to the consistency of the pineapple

Directions
1. Mix 1 cup whipping cream, cream of coconut pineapples and cherries is a bowl, place a mesh strainer ontop
2. Whisk egg yolks
3. Warm the half and half and brown sugar in a medium saucepan
4. Pour warmed milk into the egg yolks whisking constantly, then scrape warmed egg yolks back into the bowl
5. Stir constantly while heating, scrapping bottom, until mixture coats the spatula
6. Pour the custard through the strainer and stir into the cream
7. Mix and chill
8. Freeze in ice cream maker

On Tuesday, we went into the city with my cousin and his two girls. We went to Toys R Us, FAO Schwarz, M&M store, The American Girl store, the Wax Museum… We had lunch at Jekyll and Hyde where I had one of the worst meals of my life. You’d think a turkey wrap with guacamole and salsa would be safe. I think the only seasoning they have there is salt and they use a lot of it. Get the salad. The salad that came with my meal was good, though drenched in dressing.

  1. The next time I’m in New Jersey, I am stopping by your place and having dinner =) Plus, I need to go back to NYC. Riding the Staten Island Ferry to Manhattan and back to Staten Ferry didn’t count =P.
