We celebrated Bryan’s 30th birthday again on Wednesday (his actual birthday) by throwing a surprise party.
My plan was to have a quiet sit-down dinner with a few friends. Who knew that people would actually have some time to spend with us on a weekday? 16 people. Of course I still stuck with my original plan to make something awesome because I’m stupid like that. I made Chicken Stuffed Peppers with Enchilada Sauce. It seemed like a good idea, lots of cheese, sauce with chocolate in it, it certainly was delicious.
I started cooking at 2:30 and finished around 7:15 with breaks in between for cleaning, showering, ice cream making… I made ten peppers and some extra vegetarian stuffing. Wasn’t nearly enough food, lol. I had some avocados that I gave to Carolyn to make guacamole, but that was gone before anyone else even got there.
Actually, by 7:15, only Rachelle, Chris, Carolyn and Tom were there. Bryan usually comes home between 7:20-7:30. Around 7:20 Virginia and her boyfriend arrived. At 7:25 I heard Brian knocking at the back door. Bryan pulled in around 7:30 and went and got the mail. I told him I had a surprise in the basement, where of course, everyone was hiding. He had no idea and was happy he didn’t come down without pants on. Everyone else arrived shortly after.
Rachelle had yummy chocolate cake pops, Emily brought a seriously chocolatey cake and of course, I made chocolate ice cream with chocolate fudge. We played some apples to apples, had some fruity wine and grapes. I’d say it was pretty successful.
If I ever make the stuffed peppers again, it will not be for 16 people. I’ll also probably marinate the chicken and make the sauce ahead of time.
I finished my third week of doing the first Physique57 DVD this morning. Starting on one of the other DVDs Sunday. I’ll write a review once I’ve tried all three, but so far so good. Challenging and fun :)

I adore stuffed peppers! They are a lot of work. Haha, I don’t think I could ever do it for that many people. I give you a lot of credit.
