This was a bad, bad food week. I ate out every day the second half of this week. My mom also received gift baskets from work filled with fruit and cookies. Since I knew I would be eating out for dinner at night, I pretty much stuck to fruit and yogurt for breakfast and lunch. One day I had half an avocado with balsamic vinegar for lunch which was actually really good. The two days we had lunch out, I ordered the grilled salmon. I also exercised in the mornings. Minimal pre-dinner damage.
But then, of course, there was dinner. Wednesday night we had sushi, not too bad. Thursday I had a grilled eggplant sandwich with pesto, cheese and of course, sweet potato fries. Friday, we had Italian for Carolyn’s birthday. I had a pasta eggplant dish, a bit of everyone else’s food and a glass of wine. There was chocolate for dessert. Yesterday was the best yummy wise, worst as far as calorie count goes. We went out for Indian for Helen’s birthday. I had plenty of fried appetizers and nann as well as vegetable kofta for my main dish. I knew it was bad, but oh was it good. Worth every calorie. That sauce, I could eat that every day. And of course Emily made delicious cake for dessert. Lemon. It was the kind of cake that you feel like you could have twelve servings of and still want more. I mean, just LOOK at it!
And I’m still in trouble because we have some of the peanut butter cup ice cream left, plus some chocolate my daddy gave me, and oh yes, the leftover smores ingredients I used in the other ice cream. Someone asked on a previous entry if the ice cream is hard to make. Some of the ice cream is very easy, like the peanut butter cup, that only took maybe 10 minutes to put together and 20 to freeze. The smores ice cream however took around an hour and a half all together. I would post the recipe, but I got the chocolate recipe from a book and then I just added toasted marshmallows, graham crackers and chocolate. The key is to toast the marshmallows. That gives it the authentic smores taste.
Anyway, yes, trying to be good. Off to exercise now.

That cake looks DELICIOUS. I cannot remember the last time I had a lemon cake but I think those are my favourite. I tend to hate cake because of its sponginess but it also depends on what kind of cake it is. At least you have been trying to be good!

Sorry about the last post… I felt so bad… I wanted to IM you about it, but I was hardly ever on this weekend…
Anyway, I know what you mean about having a bad week. Same with me. I feel SO fat eating all this unhealthy food. =( Free food though, so it’s hard to say no. =( Haha…

That is a gorgeous cake! I wouldn’t be too hard on yourself for the eating. Life happens, dinners happen, and parties happen. The important thing is you did try and order more sensible dinners (grilled salmon), and you worked out beforehand.
