I recently discovered that green monster milk (almond milk + spinach pureed until you have green milk) works very well with overnight oats. I decided to see if it would work in muffins as well. Warning: I like my baked goods super moist. I’ve been known to eat melted cookie dough.
I pureed 1 3/4 cup milk + two handfuls of spinach.
Added two spoonfuls of chia seeds
added 1 1/2 cup oats and let soak
pureed 3 medium sized bananas
1/4 cup unsweetened apple sauce
1 tsp vanilla extract
quite a bit of cinnamon (very accurate measurement, I know)
2 tsp cocoa powder
1/4 cup peanut butter
and added that to the oats
plus, 1/2 cup whole wheat flour
1 egg
1 tsp salt
1 tsp baking powder
1/2 tsp baking soda
little bit of honey (depends on how sweet you want your muffins)
Then I added about a cup of raisins and 1/4 cup blueberries. I think walnuts would taste pretty good in these too.
Baked at 350 for 30 minutes
It’s about 170 calories per muffin. I’ve also made these with blueberries and strawberries instead of the raisins and without peanut butter, 1/2 cup more whole wheat, 1/2 cup less oats and one less banana. They were a little bland, but a good pre-workout snack.


Haha to be honest I don’t like the sound of green monster milk, but I’ve never had it so I can’t accurately judge. I love having super moist baked goods too, especially if they’re sweet. :D
well, I definitely don’t recommend drinking the milk on its own :D
